Our Story
Pablo Martinez, a young, forward- thinking winemaker, has developed a revolutionary approach to making non-alcoholic wine. His process utilizes elements already found in the grapes & processes native to wine making.
The seeds of his idea, derived from generations of organic winemaking, took five years of constant iterating to fully come alive. The result is a wine made using organic ingredients that preserves the mouthfeel, taste, and aroma of the original wine while removing the need for added sugar, artificial sweeteners or unnatural flavor additives.
Hollow Leg is a collaboration between Galician winemaker Pablo Martinez, restaurateur Jamie O’Toole, and wine importer Ronan Farrell, each with a shared vision to create a range of quality wines with “everything but alcohol”, for those who truly treasure good wine, vibrant socializing and the following morning in equal measure. and the grapes reach their uttermost expression.

We make it in the right way with category leading numbers: A 150ml glass contains only 0.3g of sugar and 6 calories… Less than a glass of cucumber water! And without any icky additives or supplements - everything in the bottle is made from organic ingredients, all derived from wine
